Pumpkin Pie Overnight Oats

The moment September hits, all I want is pumpkin spice. There is something so cozy about adding a little pumpkin to your mornings that makes things so much cozier. These Pumpkin Pie Overnight Oats help to capture that cozy, spiced goodness in a nourishing, make-ahead breakfast.

These oats are made with fiber rich oats, pumpkin puree, warm pumpkin pie spice, and naturally sweetened with date syrup, this recipe is packed with fiber, healthy fats, and plant-based protein (thanks to chia and hemp seeds). The best part? It takes just 5 minutes to prep. This is my favorite way to save time in the mornings especially during the busy fall months.

What you need (2 servings)

3/4 cup rolled oats (gluten-free if needed)

1/4 cup pumpkin puree

1 1/2 tbsp chia seeds

2 tbsp hemp seeds

1 1/3 cup milk of choice (almond, oat, or coconut work well. You can also use whole milk as well)

2 tbsp date syrup (or adjust to taste)

1 tsp pumpkin pie spice (I love this one here)

A pinch of sea salt

Optional toppings: nut butter, chopped pecans, coconut yogurt, pumpkin seeds, pumpkin butter, flax meal, banana or a sprinkle of cinnamon.

Instructions

1. In a jar or container, combine oats, chia seeds, hemp seeds, pumpkin puree, pumpkin pie spice, salt, and date syrup.

2. Pour in milk and stir until fully combined.

3. Cover and refrigerate overnight for at least 4 hours.

4. In the morning, give it a good stir, add toppings if desired, and enjoy!

These oats will stay fresh in the fridge for up to 4 days making them perfect for busy morning meal prep.

Meal Prep Tip

Make extra jars at once for a grab-and-go breakfast all week. To switch it up, try topping with almond butter, pumpkin seeds, or dark chocolate chips for a little treat.
