Banana Snickers (Added Sugar Free)
These banana snickers are one of my nutritious favorite snacks/desserts. They are fun and easy to make as well as healthy.
I love snacking on real whole fruit because it is a fantastic way to satisfy your sweet tooth when you're craving something sweet while also receiving lots of beautiful benefits. Fruit is filled with incredible benefits for your skin, digestion, immune system, energy and more. I find that when I prep snacks/desserts like this, my family and I are less likely to reach for packaged foods. I love this recipe because it takes just a few minutes to make and they can be easily stored in the freezer for a quick grab and go option. Having healthier snack options ready for grab and go is one thing I swear by as a busy mom -it’s life changing for eating healthier and to create a smoother week. Plus, this is such a great way to use up any over ripe bananas that are on their last leg.
For this recipe I did make my own two ingredient added sugar free chocolate sauce. However, you can use any chocolate chips or chocolate bar that you love. If you do choose to use a chocolate bar or chocolate chips just heat in a microwave or in a saucepan over low heat with a drop of coconut oil until melted.
I also used peanut butter for this recipe. However, you can use any nut or seed butter that you wish. If peanuts aren’t your thing you can use chopped almonds or sunflower seeds to get that added crunch.
To store, I recommend keeping these in a silicone baggy in the freezer for up to 3 months.
What you need (makes 12 servings):
3 large bananas peeled
1/3 cup peanut butter
3 tbsp cacao powder
3 tbsp coconut oil
1/4 cup chopped peanuts
Directions: Begin by laying a piece of parchment paper over a large plate or pan. Then slice the bananas in half horizontally then again in half vertically to end up with 12 banana slices. Then spread a little bit of peanut butter over the slices of banana. Place the banana with peanut butter onto the parchment paper, nut butter facing up. Place in the freezer for at least 1 hour. Meanwhile add the cacao powder and coconut oil to a sauce pan and whisk until smooth and melted. Remove the bananas from the freezer. Drizzle the chocolate sauce over the nut butter layer. Then while it is still wet, sprinkle the chopped peanuts over the top. Option to sprinkle flaky salt over the top! Place back in the freezer for about 5-10 minutes or until the chocolate has solidified before enjoying.
