Potato, Chickpea and Bell Pepper Sheet Pan Meal With A Creamy Cashew Greens Sauce

One of my favorite weeknight dinners is a sheet pan meal. They’re so simple and versatile. Plus, you can make a big batch and eat for days ahead. This saves you time in the kitchen and helps you to extend your healthy eating habits into the next day.

Sheet pan meals are simple. Just toss everything onto a baking sheet and let the oven do the work. My favorite combination is this one here: potatoes, red bell peppers and chickpeas.

The best way to elevate sheet pan meals is by adding lots of spices and a good sauce on top!

This meal on its own is plant based and naturally gluten free. Feel free to add your favorite additional protein as needed!

What you need (serves 2):

Roasted Veggies:

3 medium yellow potatoes cubed
1 red bell peppers diced
1 15 oz can garbanzo beans
2 tbsp cooking oil like avocado oil
1 1/2 tbsp nutritional yeast
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp ground coriander
A few pinches of salt (about 1 tsp)
Fresh ground black pepper to taste

Creamy Cashew Greens Sauce

1/2 cup cashews (soak overnight if you aren’t using a high speed blender)
A few pinches of salt or to taste
A handful of spinach
Optional handful of fresh parsley or cilantro
The juice from 1 lemon
A pinch of fresh ground black pepper
1/2 tsp garlic powder
1/2 cup of water (plus more as needed to thin)

Additional toppings: Sliced avocado, leafy greens, fresh herbs, additional prepared protein (salmon, quinoa or tofu would work well)

Directions: Preheat your oven to 420. Line a baking sheet with parchment paper. Add the “Roasted Veggie” ingredients onto the baking sheet and toss until well combined. Place the baking sheet into the oven and bake for 25-30 minutes or until the potatoes are golden and cooked through. Meanwhile add the sauce ingredients to a blender. Blend until smooth. Assemble your bowl with the roasted veggies and chickpeas, the sauce and your additional toppings. Enjoy!

Store in an airtight container for up to 5 days.
