Homemade Almond Milk

One of the best things I ever did for my health and my wallet was swapping store bought nut milks for homemade nut milks.  A good organic, added sugar and artificial ingredient free nut milk can cost anywhere between $6-12.  A homemade milk will cost you half of that and it will be even creamier and delicious!

This is my favorite milk recipe to make at home.  It is made with simple ingredients and only sweetened with dates.

I love flavoring mine with a real vanilla bean powder like this one here.  It makes the best tasting milk for your smoothies, coffees, matches and more.

This almond milk froths so well for those that love frothing your milks for homemade coffee and matcha.  I do recommend using the larger amount of almonds listed on the ingredient list below if you want a creamier milk.  If you are using this milk for things like smoothies, pancakes and oatmeals you can go on the lighter side with the nuts.

I do recommend soaking your nuts overnight if possible as this will make them easier on the digestion.  However, if you are making this the day before using, you don’t have to worry about soaking.

What you need (makes 32 oz.)

1 - 1 1/4 cups raw almonds (if using for coffee/matcha I recommend 1 1/4 cup for a creamer consistency)
1-3 pitted medjool dates
A pinch of sea salt
32 oz filtered water
1/4 tsp vanilla bean powder or 1 tsp vanilla extract

Directions:

Add all of the ingredients to a high speed blender.  Blend until smooth.  Place a nut milk bag or cheese cloth over a bowl.  Pour the almond milk into the nut milk bag.  Squeeze the milk into the bowl.  Once all of the liquid is filtered out, transfer the milk to a glass bottle.  Keep covered in the fridge for up to 5 days.  Enjoy!
