Fiesta Grain Bowl With A Cashew Cilantro Lime Cream
One thing that has helped make healthier eating more doable for me is the cook once, eat twice method. Now that I have two littles at home, this method makes my life so much easier.
Cook once, eat twice simply means that you cook a meal with enough servings to last you through a few meals. This could look like cooking a big batch of dinner or batch prepping lunch to have leftovers ready to go over the next day or days.
This is one of my favorite cook once, eat twice lunches.
When you have lunch ready to go the next day you take away the guess work which makes healthy eating easier.
This Fiesta Grain Bowl is easy to prepare, bursting with flavor, packed with essential vitamins and nutrients to help you feel your best. Plus, this recipe is meal prep-friendly.
This grain bowl contains protein, healthy fats and lean plant-based protein to help keep you full and satiated which is important for minimizing grazing throughout the day.
What you need (serves 2):
A few large handful of leafy greens
2 cups cooked quinoa
2/3 cup diced tomatoes
2/3 cup diced cucumber
1 15 oz can garbanzo beans drained and rinsed
1 cup frozen corn
A few pinches of salt
1 tsp smoked paprika
1 tsp garlic powder
2 tbsp cooking oil
Directions: Preheat your oven to 415 F. Line a baking sheet with parchment paper. Add the garbanzo beans, corn, salt, smoked paprika, garlic powder and cooking oil to the pan. Toss and then place in the oven for 20-25 minutes. Meanwhile make the Cashew Cilantro Lime Crema (directions below). Remove the chickpeas and corn from the oven. Assemble your bowl with the leafy greens, quinoa, tomatoes, cucumber and the crema. Enjoy!
Cilantro Lime Crema (makes 8-10 servings):
What you need:
1/2 cup raw cashews (option to soak overnight for easier digestion)
1 cup filtered water
A few pinches of salt or to taste
2 limes juiced or 2 tbsp lime juice
1/2 cup fresh cilantro
1 tsp garlic powder
Directions: Add all ingredients to a high speed blender or food processor and blend until smooth and creamy. Store in an airtight glass container for up to 5 days. Enjoy.
