Gut Friendly Grain Bowl
A healthy gut microbiome is necessary for the health of your immune system, hormonal balance, energy, cognitive function, weight management, mood, skin health and so much more. A healthy gut microbiome is crucial for looking and feeling your best. While there are many ways to support your individual gut health, starting with gut-supporting foods is an excellent place to begin.
This lunch is one of my favorite ways to support the gut microbiome. This bowl contains fiber, leafy greens, fermented foods, and hydrating foods to support the growth of beneficial bacteria in the gut as well as smooth digestion.
I especially love this bowl because it is well balanced with lean protein, healthy fats, fiber and leafy greens. This combination will help support your blood sugar levels (which is also necessary for a healthy gut microbiome) and it will help to keep you full and satiated till your next meal. When you are full and satiated you will be less likely to snack or eat in excess which will allow your digestion to get the break it needs between meals- another essential for healthy digestion.
What you need (serves 1):
1 large handful of romaine lettuce chopped or other leafy green like spinach
2 tbsp hummus
1 cup cooked quinoa
1/3 of an avocado diced
2 tbsp sauerkraut
1/3 cup diced cucumber
fresh minced cilantro for garnish
1/2 a lemon juiced or 1 1/2 tbsp of lemon juice
1/2 tsp dijon mustard
a pinch of salt
1 1/2 tbsp olive oil
Directions: Assemble your bowl with the lettuce, hummus, quinoa, sauerkraut, avocado, cucumber and optional cilantro. Then in a jar whisk together the lemon juice, dijon mustard, salt and olive oil until smooth. Drizzle over the bowl and toss everything until well combined. Enjoy!
