Warm Kale And Veggie Salad With Quinoa And A Lemon Tahini Dressing

I love a good salad. Even when I was a young kid I would beg for a salad. There is something so refreshing and delicious about biting into a fresh and juicy salad. However, I don’t always crave a raw salad, especially when it’s a little cooler out. This is where warm salads come in.

Warm salads are a great way to enjoy a fresh and healthy salad when you want something more cozy. This is one of my favorite warm salads to make. It’s packed with fiber, protein and healthy fats which make this salad satiating and filling. Plus, it is packed with essential vitamins and minerals from the variety of fresh and vibrant ingredients.

For this salad I used kale. Kale is a leafy green that can be warmed up and it doesn’t wilt quickly or become soggy like other leafy greens. Plus, some find kale more enjoyable when it is warmed up rather than eating it raw. Kale is also filled with fiber and chlorophyll which has amazing benefits for your gut health and immunity.

What you need (serves 1):

1 tbsp cooking oil like avocado oil
1/3 of a bell pepper sliced
1 medium carrots thinly sliced or diced
A few pinches of salt
A few pinches of fresh ground black pepper
Optional 1 clove of garlic minced or 1/2 tsp garlic powder
1 large handful of chopped kale
1 cup pre-cooked quinoa
1/2 cup prepared chickpeas

Optional toppings: Fresh minced cilantro, hempseeds, avocado, cucumber

Lemon Tahini Dressing

3 tbsp tahini
The juice from 1 juicy lemon or 2 tbsp of lemon juice
A pinch of salt
About 1-2 tbsp of water to thin or as needed

Directions:

    1. Heat a pan over low-medium heat. Add the oil.

2. Add the bell pepper, carrots, salt, pepper and garlic and cook for about 5 minutes.

3. Add the kale, quinoa and chickpeas (add more salt to season as needed). heat for about 2 minutes then turn off the heat.

4. Meanwhile, combine the Lemon Tahini Sauce ingredients in a jar and whisk until smooth.

5. Assemble your salad with the kale and veggie mix and the dressing. Toss until well combined then top with the optional toppings. Enjoy!
