Peach And Arugula Glow Salad With A Ginger Honey Vinaigrette

When summer is in full swing and your body is craving something fresh, nourishing, and energizing, this Peach & Arugula Glow Salad hits all the right notes. It’s sweet, peppery, creamy, and crunchy - and best of all, every ingredient is doing powerful things behind the scenes to support your gut and hormones.

I truly believe that when you feel good inside, you glow on the outside. That is why nourishing your body with wholesome, nutrient rich foods is key.

Why This Salad Supports Gut & Hormonal Health

Peaches

Juicy and packed with fiber, peaches support digestion and help to balance blood sugar. Their natural antioxidants also help to fight inflammation, which is key to keeping hormones in check and skin looking radiant.

Arugula

This peppery green is one of my favorite leafy greens especially for salads. Arugula is a cruciferous vegetable, which means it helps the liver metabolize excess estrogen—making it a hormone-balancing powerhouse. It’s also rich in prebiotic fiber which feeds the good bacteria in your gut.

Goat Cheese

Goat cheese is rich in calcium and healthy fats that support hormone production, especially during busy or stressful seasons. It also adds a satisfying creaminess without the bloat. If you don’t love goat cheese or want to keep this dairy free try a plant based goat cheese or plant based feta cheese - both work well here. I recommend looking for a cashew based plant based cheese as cashews offer many health benefits.

Pumpkin Seeds

These little seeds are full of zinc and magnesium, both essential for healthy hormones. Zinc supports the hormone function that supports regular ovulation and progesterone production, while magnesium is your go-to for stress regulation and smoother cycles. Plus, they add the perfect crunch!

Pecans

Loaded with healthy fats and antioxidants, pecans help reduce inflammation and keep your blood sugar stable. Both of which are key factors in balanced hormones. Plus, they add to the crunch in this salad which makes it more enjoyable.

Dates

Dates are rich in fiber and potassium which helps with digestion, natural detoxification and skin health.

Ginger Honey Vinaigrette

Ginger soothes the gut and reduces inflammation which is why I love it in this vinaigrette. Combined with raw honey (which contains enzymes and prebiotics), it creates a vinaigrette that’s as healing as it is flavorful.



What you need (serves 1):

    •    1 1/2- 2 cups arugula

    •    1 diced ripe peach (white peach, yellow nectarine and yellow peach all work well)

    •   2 tbsp crumbled goat cheese

    •    1 1/2 tbsp raw pumpkin seeds

    •    2 tbsp chopped pecans

    •    2 Medjool dates, pitted and diced

Ginger Honey Vinaigrette (makes 1-12 servings)

    •    2/3 cup olive oil

    •    1/3 cup apple cider vinegar

  • 1 lemon juiced or 2 tbsp of lemon juice

    •    1-2 tsp raw honey

    •   1 tsp fresh grated ginger

    •    Pinch of salt and fresh ground black pepper

  • 1 tbsp dijon mustard



Instructions

    1.    In a jar, whisk together all vinaigrette ingredients until well blended.

    2.    In a large salad bowl, toss arugula with sliced peaches, goat cheese, pumpkin seeds, pecans, and dates.

    3.    Drizzle with the ginger honey vinaigrette just before serving.

    4.    Toss and enjoy immediately.

Option to add micro greens on top for added glow benefits.

If meal prepping: I recommend keeping the dressing on the side until you are ready to serve. This salad can be stored in a glass sealed container for up to 2 days.

Want more protein? While the nuts, seeds and goat cheese do offer significant protein, you can add more as needed for your unique goals and needs. Prepared salmon, tofu or chicken (whatever is your thing) would work great here!
