PB And J Stuffed Dates
Something that is always stocked in my freezer are stuffed dates. They are easy to prep and are perfect for grab and go.
Dates are a whole fruit that is full of fiber and vitamins and minerals. With added healthy fats and protein like nut/seed butter they become a great energizing and satiating snack.
These pb and j stuffed dates or one of my favorite ways to make them. With the fruity jam they become more flavorful and sweeter. I recommend swapping a typical sugary jam for an unsweetened one. You can easily make a homemade jam at home with frozen fruit and a little lemon juice or you can find one at a local health food store. Since they’re stored in the freezer you do’t have to worry about preservatives because freezing them will keep them fresh! I have a homemade jam recipe here.
I did add drizzled chocolate on top with flaky sea salt; however, you can totally skip this step if you aren’t feeling it! They’re fabulous either way! For the chocolate drizzle you can simply melt chocolate with a small amount of coconut oil in a pan over very low heat until smooth and melted (do not over heat!).
Here’s how to make them:
Step 1: Begin by slicing each date in half the long way. Remove the pit if it’s not removed already.
Step 2: Add a layer of peanut, almond or sunflower butter (for a nut free approach) to each date (about 1/2 a tbsp)
Step 3: Add a layer of jam on top (about 1/2 a tsbp). Place each date on a plate once filled.
Step 4: Place the plate of dates in the freezer for at least 1 hour. If skipping the chocolate you can store the dates in a reusable silicone bag OR in another container in the freezer. Just let the date thaw for a few minutes before enjoying!
Step 5: If you are adding chocolate, remove the dates from the freezer and drizzle with chocolate. Place back in the freezer for a minute before topping with flaky salt.
