Nourishing Almond Butter Overnight Oats- Sweetened With Dates

I am a huge fan of overnight, especially since having my second born. Mornings, and life in general, has become busier than ever. As much as I love cooking and spending time in my kitchen, I love having food prepped and ready-to-go even more.

This overnight oat recipe is one of my go-to’s for a quick, nourishing and simple breakfast. It’s naturally sweetened with dates, includes powerhouse ingredients like chia seeds and hemp hearts, and is packed with the kind of glow-enhancing nutrients that support skin health, digestion, and sustained energy.

And the best part? You make it the night before so there is minimal work you have to do in the morning. All you have to do is combine everything in a jar or glass Tupperware bowl and pop it in the fridge. In the morning you will have a family friendly breakfast that is ready to go. Just add your favorite toppings like berries and sliced banana or other in-season fruit.

I love including nutrient rich whole foods in my meals, especially at breakfast to support that natural glow and energy. Here is a breakdown of some of the foods in this overnight oat recipe:

Dates: These sweet bites are full of fiber, magnesium, and potassium which helps to balance blood sugar while offering a natural, whole-food sweetness.

Chia Seeds: These little seeds are packed with omega-3s. Plus, they help reduce inflammation and support glowing skin, hair, and nails.

Hemp Seeds: A complete plant protein and a good source of zinc, an essential for clear and radiant skin.

This recipe makes about 2-3 servings. In my home it is enough to feed myself, my three year old and my baby. Adjust your ratio as needed depending on how many people you are serving and how many days you will be eating them for.

When meal prepping for a few days ahead I recommend using separate jars for reach day of the week. Add your topping right on top of the oat mixture so you can have a quick grab and go breakfast.

What you need (serves 2-3):

    • 1 cup rolled oats

    • 1 1/3- 1 1/2 cups unsweetened almond milk or milk of choice (adjust the ratio as needed)

    • 2 tbsp date syrup

    • 1 1/2 tbsp chia seeds

    • 2 tbsp hemp hearts

    • Pinch of sea salt

  • 3 tbsp almond butter

Directions:

    1.    Combine all ingredients into a jar or glass container.

    2.   Whisk until smooth.

    3.    Cover and set in the fridge for at least 3 hours or overnight

    4.    In the morning stir and add a splash of milk as needed to thin. Top with your favorite toppings and enjoy!

This recipe is about more than fueling your day, it’s about nourishing your natural glow from the inside out. Every spoonful is a reminder: you don’t have to choose between living healthier and convenience. You can have both.
