Pumpkin Spice Overnight Oats

I love that they’re quick to prep the night before, made with simple, wholesome ingredients, and naturally sweetened with maple syrup. Plus, they’re rich in fiber, plant-based protein, and omega-3s from chia and hemp seeds. This is perfect fuel for busy mornings or post-workout energy.

What You’ll Need (serves 2):

1 cup old-fashioned oats
1 ½ tbsp chia seeds
2 tbsp hemp seeds
½ serving vanilla protein powder (or collagen)
1 ½ – 2 tsp pumpkin pie spice (adjust to taste)
⅓ cup pumpkin purée (not pumpkin pie filling)
1 ½ tbsp pure maple syrup
1 ⅓ cups almond milk (or your favorite milk)

Directions:

Combine all ingredients in a jar or glass Tupperware container and whisk until well combined. Cover and store in the fridge for at least 3 hours or overnight.

In the morning, give your oats a stir. Add an extra splash of milk if needed. Top with a spoonful of Greek yogurt, sliced banana, crushed pecans, or a drizzle of almond butter for an extra cozy touch. Enjoy!
