White Bean Avocado Toast
Avocado toast is one of my favorite meals. There are so many different ways you can make it which keeps things fun and exciting, especially when it cones to healthy eating. There are so many fun ways to dress it up and add more vitamins and nutrients.
Avocados are a powerhouse of nutrition. They are packed with fiber and healthy fats. One of the reasons why I love them is because they are filled with Vitamin E, C and B vitamins all of which impact glowing skin and better health.
When making avocado toast, I love to add white beans in the mix. This helps up the protein in your toast and it adds more vitamins and minerals.
When choosing a bean for this recipe, cannellini beans, chickpeas or navy beans work great! This way you get more protein in every bite and still get that beautiful green color you want in an avocado toast.
For extra toppings I recommend a sprinkle of pumpkin seeds or hemp seeds to add even more vitamins and minerals as well as protein. I also love including an egg on top as well (which will make this a vitamin B and protein rich meal!)
This toast is perfect for lunch or breakfast!
What you need (serves 1):
8 oz mashed white beans (drained and rinsed)
1/2 of a large avocado mashed
A few pinch of salt
1/2 a lemon juiced or 1 tbsp of lemon juice
A few tbsp of fresh minced parsley or cilantro
Fresh ground black pepper to taste
Optional 1 tsp dijon mustard
2 pieces of your favorite bread toasted
Directions: Add the white beans, avocado, salt, lemon juice, fresh herbs, black pepper and optional dijon mustard to a bowl and mix until well combined. Scoop the avocado mix onto your toast. Top with your favorites toppings. Enjoy!
Favorite toppings: Seeds, egg, sauerkraut, smoked salmon
