Black Bean Taco Bake Rice Bowls

One of my family’s favorite weeknight dinner are these taco bake rice bowls. They are easy, healthy and delicious. Plus, they are totally customizable. Just use whatever veggies and toppings you have on hand in your fridge!

For taco seasoning I used this adobo seasoning here. I love it because it’s lighter in flavor which my kids tend to like more than a typical taco seasoning.

I also used a plant based ground beef to add protein to my bowls however you can use any protein you wish! If black beans are going to be your primary source of protein for this bowl, I recommend adding an extra can! With the addition of rice and greek yogurt you should be god to go!

What you need (makes 4 servings):

1 zucchini diced
1 bell pepper diced
1/3 of a red onion diced
1 15 oz can black beans
3/4 cup frozen corn
½ tbsp taco seasoning
Salt as desired
1 tbsp cooking oil

Directions:

Preheat your oven to 420F. Line a baking sheet with parchment paper. Add all ingredients to the pan. Toss and place in the oven for 20 minutes.

Serve your bowl with jasmine or brown rice and your choice of protein.

Additional toppings I love:

  • Fresh lime juice

  • Greek yogurt

  • Fresh minced cilantro

  • Avocado

  • Hot sauce (this is my favorite here)
