Anti-inflammatory Glow Salad With Greek Style Chickpea And An Herbed Apple Cider Vinaigrette
One of my favorite ways to nourish that glow from within is with anti-inflammatory foods. Think vibrant, colorful foods from nature itself. This is one of my favorite ways to enjoy them.
The reason why I love this glow salad so much is of course because it’s anti-inflammatory which contributes to a healthy gut microbiome, glowing skin, strong immunity, etc. I also love it because it is meal prep friendly. You can actually make this salad in one bowl with the dressing on top and you don’t have to worry about it being soggy the next day. That is one of my favorite things about kale salads. They actually taste even better on days two and three after being marinated in the dressing.
Another reason why I love this salad is because of the greek style chickpeas. These chickpeas are so flavorful and delicious. Chickpeas are a great source of fiber which aids in a healthy gut microbiome and they can even help reduce inflammation and boost collagen production.
What you need (makes 3 servings):
1 can garbanzo beans drained and rinsed
1 tsp Za'atar seasoning
1/2 tsp garlic powder
A few pinches of salt
A few pinches of fresh ground black pepper
1 tbsp cooking oil like avocado oil
1 bunch of kale chopped
1 cup diced tomato
1 small cucumber diced
1 1/2 cups red cabbage chopped
3 cups cooked quinoa (1 cup uncooked quinoa cooked according to package instructions)
Herbed Apple Cider Vinaigrette
1/3 cup ACV (unfiltered)
2/3 cup olive oil
A pinch of salt
1 1/2 tsp dijon mustard
A pinch of fresh ground black pepper
1/4 tsp dried oregano
1/4 tsp dried basil
1/4 tsp garlic powder
Optional 1 tsp raw honey
Directions: Preheat your oven to 420F. Line a baking sheet with parchment paper. Add the chickpeas, Za'atar seasoning, salt, pepper and oil to the baking sheet and toss. Place in the oven for 20-25 minutes. Meanwhile, combine the rest of the salad ingredients in a bowl. In a jar whisk together the Herbed Apple Cider Vinaigrette ingredients until smooth. Pour the dressing over the salad. Add the roasted chickpeas. Toss and enjoy!
Store in an airtight container in the fridge for up to 4 days.
