Roasted Carrot & Chickpea Glow Bowl With A Tangy Honey Tahini Dressing

Two of my favorite things to prep for lunch are roasted chickpeas and a delicious tahini dressing. These are two essentials that I always have on hand in the fridge ready to add to meals.

One reason is because they elevate a meal, specifically lunch salads. They add flavor and texture. I find that they make salads (or any bowl) more enjoyable. Another reason is because of the vitamins and nutrients that they add to meals.

Chickpeas are a great source of plant based protein, healthy fats and fiber. They also contain B vitamins which support energy levels. This is key midday to support energy levels through the rest of the day. They also contain beauty minerals like zinc.

Tahini, which is essentially just ground up sesame seeds, also contains amazing vitamins and nutrients. Like chickpeas, it’s a source of healthy fats and it contain B vitamins. On top of that it contains Vitamin E which is essential for glowing skin and hair.

This is one of my favorite bowls! It’s easy to make and meal prep friendly. Just make a big batch and you’ll have a healthy meal ready to go for days ahead.

What you need (serves 2):

2 large carrots sliced
1 15 oz can garbanzo beans drained and rinsed
A few pinch of salt or to taste
A few pinches of fresh ground black pepper
2 tbsp cooking oil
A couple large handfuls of chopped kale
2 cups cooked quinoa
1 cup sliced red cabbage
Fresh cilantro for topping

Tangy Honey Tahini Dressing:

1/4 cup tahini
The juice from 1 lemon
1 tsp dijon mustard
1 tsp raw honey
A pinch of salt
A pinch of fresh ground black pepper
About 2 tbsp of water to thin (add as needed)

Directions:

Preheat your air fryer or oven to 425F. Line a baking sheet or air fryer tray with parchment paper. In a bowl mix together the carrots, a pinch or salt, a pinch of fresh ground black pepper and 1 tbsp of oil. Add to one side of the pan. In the same bowl mix together the chickpeas, a pinch of salt, a pinch of fresh ground black pepper and 1 tbsp oil. Add to the other side of the tray. Place in the air fryer for 15 minutes or the oven for 20 minutes. Meanwhile, combine the ingredients for the Tangy Honey Tahini Dressing ingredients in a jar. Whisk until smooth, gradually adding water as needed. It should be drippy, not thick or watery. Then assemble your bowl with the kale (massage with olive oil), cabbage, roasted chickpeas, roasted carrots, the dressing and fresh minced cilantro. Toss and enjoy!
