Mint Chocolate Chip Smoothie

If you are a fan of mint chocolate chip ice cream you will love this smoothie. It is full of flavor and packed so many vitamins and nutrients. It is the perfect energizing way to start the day or fuel after a workout. This recipe is packed with fiber, protein, complex carbs (the good kind of carbs) and healthy fats so it will be sure to keep you full, satiated and energized.

Serves 1

Ingredients:

8-10 oz. plant based milk
1 serving of vanilla plant based protein powder (I used this one here)
1 tsp chia seeds (optional)
1/4 of an avocado
1/2 of a frozen banana
A small handful of fresh or frozen spinach or kale
1 pitted date
A few springs of fresh mint leaves
1 cup of ice optional to thicken
2 tbsp cacao nibs

Directions:

Blend together the milk, protein powder, chia seeds, avocado, banana, leafy greens, banana, date and optional ice in a high speed blender. At the last 15 seconds add the cacao nibs and blend. Pour and enjoy!
