Chickpea Chocolate Chip Protein Cookie Dough Balls
These chickpea based protein balls have been a staple in my meal prep rotation for years and years. These easy to make balls will satisfy your sweet tooth, keep your energy steady, and nourish you from the inside out. Having homemade snacks ready to grab and go makes my life so much easier as a busy mom- especially ones that are kid approved like these balls.
They’re:

• Full of fiber, plant-based protein, and healthy fats
• Meal-prep friendly (I keep mine in the freezer to last longer!)

We’re not just talking about glowing skin (though you’ll definitely notice that too). These cookie dough balls support:

Ingredients (makes 16 balls):
• 1 15 oz can chickpeas, drained and rinsed
• 1/2 cup nut butter (almond, peanut, or cashew work great)
• 1/4 cup maple syrup
• 1 tsp vanilla extract or vanilla bean powder (if using a flavored protein you can skip this!)
• Pinch of sea salt
• 1 serving of vanilla protein powder (plant-based or collagen, your choice)
• 1/3 cup mini dark chocolate chips
Optional Add-ins:
• Dash of cinnamon or maca for extra hormone support
• Hemp seeds or flax for omega-3s
• Shredded coconut for texture
Direction:
1. In a food processor, combine all of the ingredients (leaving out the chocolate chips) and pulse until you have a smooth batter
2. Once well combined, transfer the batter to a mixing bowl
3. Fold in chocolate chips
4. Transfer to the freezer to chill for about 30 minutes (do not let it freeze!)
5. Remove the bowl from the freezer.
6. Scoop out 2 tbsp of dough per ball and roll
7. Store in a glass container or a reusable silicone baggy in the fridge for up to 5 days or in the freezer for longer
