4 Ingredient Chocolate Chip Cookies

These 4 ingredient cookies have been a staple in my meal prep rotation for years. Why? Because they are delicious, actually healthy and so easy to make. They’re soft, chewy, naturally sweet, and made with wholesome ingredients you probably already have in your pantry. These cookies are perfect for a quick snack, an after-dinner treat, or even a grab-and-go breakfast. Plus, they are kid approved!

What you need:

1 ripe banana (the riper the better)

1 1/4 cup rolled oats

1/3 cup natural peanut butter (or almond butter if you prefer)

1/4 cup added sugar-free chocolate chips (or dark chocolate chunks) I used these chocolate chips here

Directions:

    1.    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    2.    In a mixing bowl, mash the ripe bananas until smooth.

    3.    Stir in the peanut butter until well combined.

    4.    Add the rolled oats and mix until a thick dough forms.

    5.    Fold in the chocolate chips.

    6.    Scoop spoonfuls of dough (about 2 tbsp) onto your baking sheet and gently flatten them into cookie shapes.

    7.    Bake for 10–12 minutes.

    8.    Allow to cool before enjoying (they’ll firm up a little as they cool).

My tips:

    •    For extra crunch, add chopped walnuts or pecans.

    •    For a cozy flavor twist, stir in a pinch of cinnamon or vanilla extract.

    •    Store leftovers in an airtight container in the fridge for up to 5 days or freeze for longer.
