Peanut Butter Chia Granola
Since groceries have become pricier (especially for those fancy, healthier options), I have been making an effort to make things from scratch more often.
Making food from scratch is not only budget-friendly, but also healthier and more delicious. It may sound overwhelming to make things from scratch, but I promise it doesn’t have to be. Some foods, especially granola, are incredibly easy to make at home.
This Peanut Butter Chia Granola is easy and quick to make. It requires minimal effort and, good news, it’s budget friendly!
And yes, as a busy mom of 3, I do make this granola at least once a week! I promise you it’s worth it!
Here’s how to make it:
2 cups oats
1 1/2 tbsp chia seeds or flaxmeal
1/3 cup pumpkin seeds
1/3 cup single ingredient peanut butter
A pinch of salt
1 tbsp coconut oil
1/3 cup maple syrup
1/2 tsp vanilla bean powder OR 1 tsp vanilla extract
Directions: Preheat your oven to 325F. Line a baking sheet with parchment paper. In a mixing bowl combine all of the ingredients. Pour onto the pan and spread into an even layer (about 1/4- 1/2 inch thick). Bake for 27 minutes. Remove from the oven and let cool completely before breaking apart storing.
For storing I use these jars here. I store it on my counter for up to 2 weeks.
Top on yogurt bowls, chia pudding and smoothies. Or simply enjoy with milk and banana as cereal.
