Low Sugar Chocolate Chip Oat Banana Muffins
I meal prep muffins every single week. They make the perfect snack or mini breakfast. Plus, they are family friendly!
I love having foods like this prepped and ready for grab and go because it helps us minimize our consumption of sugary, packaged foods and it’s budget friendly.
If you have bananas that are spotty (the spottier the better) then make these!
What you need (makes 12 muffins):
2/3 cup almond flour
2/3 cup oat flour
2/3 cup rolled oats
A pinch of salt
1 tsp baking powder
¼ cup coconut sugar
2 eggs
¾ cup almond milk
2 very ripe bananas mashed
1 tsp vanilla extract
A few dashes of cinnamon
Add ins: Chocolate chips or walnuts
Directions: Preheat your oven to 350F and line a muffin tray with muffin cups or baking spray. Mix all ingredients together in a large mixing bowl. Fold in the chocolate chips. Then fill each muffin cup with about 1/3 cup of batter until all cups are filled. Place in the oven and bake for 30 minutes. remove from the oven and let cool completely. Enjoy!
I like to store these muffins in the fridge for up to a week.
