Strawberry Cheesecake Overnight Oats
Overnight oats are easily my favorite breakfast. Mornings as a mom, whether you go to work or stay home with your kids, are busy. Something I have learned since having my first child and now having three little ones is that having breakfast ready to go makes things easier.
These Strawberry Cheesecake Overnight Oats are one of my favorite meal prep friendly breakfasts. They are easy to make and packed with everything you need to feel full, satiated and energized.
I love these oats because they are incredible for your gut health and skin health. They contain oats, chia seeds and strawberries- all of which is packed with fiber to support gut health. Plus, strawberries are high in Vitamin C to support collagen production and glowing skin.
This recipe calls for lemon juice (just a squeeze!). This is a great addition of Vitamin C and it gives these oats a little tang like a cheesecake.
What you need (makes 2 servings):
1 cup oats
1 1/2 tsp chia seeds
2 tbsp hempseed
1-2 tbsp maple syrup
A pinch of sea salt
2 tbsp plant based yogurt (I love a coconut yogurt)
1/2 a serving of vanilla protein powder
A drizzle of fresh lemon juice (about ½ a tsp)
1 1/3 cup almond milk unsweetened
1/3 cup diced strawberries
Directions: Add all ingredients to a jar and whisk until smooth. Cover and store in the fridge for at least 3 hours or overnight. They will stay good in the fridge for up to 3 days.
This recipe makes enough for me and my 2 toddlers. Adjust measurements as needed!
