Apple And Walnut Kale Salad Jar With A White Balsamic Vinaigrette

I have been loving salad jars as a busy mom. They have been making life so much easier at lunch time.

I find that lunch time is one of the most hectic for me. it’s the one meal of the day where my kids and I eat something different (most of the time). Having lunch prepped and ready to go in a jar helps to minimize my efforts in the kitchen which is huge!

This fall inspired salad jar is one of my current favorites!

This salad is one of my favorites. It’s packed with fiber, protein and healthy fats as well as other vitamins and nutrients to support your gut health and glowing skin all fall long.

What you need for this salad (makes 2 servings):

4 cups chopped kale
1 apple diced
2 celery stalks diced
1/3 cup chopped walnuts
½ cup crumbled goat cheese
1 15 oz can garbanzo beans
Optional dried cranberries or pumpkin seeds

If you want more protein, add cooked quinoa!


White Balsamic Vinaigrette (makes 4 servings)

½ cup extra-virgin olive oil
¼ cup white balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
Salt and black pepper to taste


Directions:

To the bottom of the jars add 1 serving of dressing each. Then divide up the garbanzo beans between each jar. If using quinoa add it on top of the chickpeas. Next add the following ingredients in this order: walnuts, (cranberries and pumpkin seeds if using), goat cheese, apple, celery, kale. Cover and store upright in the fridge for up to 3 days. When you’r ready to eat just dump into a bowl and toss.

If you are eating on the go, leave a little room at the top of the jar to shake the salad. Enjoy straight from the jar!
