Almond Joy Energy Balls
These Almond Joy inspired energy balls are one of my recent favorite recipes to meal prep each week. They are insane! Plus, they are made with real, whole ingredients such as, dates, almond butter, unsweetened coconut flakes, and dark chocolate. You can even keep them completely added sugar–free by choosing date-sweetened chocolate or unsweetened chocolate instead of traditional bars.
The best part? They’re meal-prep friendly and perfect for snack time, especially when those mid-afternoon cravings hit.

What you need (makes 16 balls):
About 10-12 large Medjool dates, pitted (if they are not super soft and squishy try soaking them in water for about 10 minutes)
1 cup rolled oats
1/2 cup almond butter (unsweetened, creamy)
1/3 cup unsweetened shredded coconut
1/4 cup crushed almonds
A pinch of sea salt
1/4 cup dark chocolate
Directions: In a food processor, combine the dates, oats, almond butter and salt and pulse until a sticky dough forms. If the dough isn’t sticky, ty adding a few splashes of water (this will help when forming the balls so they don’t crumble). Transfer the batter to a mixing bowl. Fold in the remaining ingredients. Then begin scooping about 2 tbsp of batter and forming into balls by gently squeezing in your palm. Transfer to a bowl or plate and let them chill in the fridge for 30 minutes.
Store in an airtight container in the fridge for up to 7 days or in the freezer for up to 2 months.

Double the batch and freeze half! You’ll thank yourself when life gets busy and you need a quick, energizing snack.
