Almond Flour Date Cookies

Healthier eating became easier for me began when I started intentionally began making my meals and snacks healthier.

I realized early on in my health and wellness journey that I could still enjoy my favorite treats, like cookies, if I simply made a few swaps to the recipes. For example, swapping cane sugar for something more holistic like dates.

These cookies are one of my favorites and they don’t contain any added sugar. Because they’re sweetened with dates, they are naturally added sugar free. Meaning they are low glycemic and gentler on the body.

What you need (makes 17 cookies):

10 pitted dates
¼ cup almond milk (unsweetened)
1 tbsp butter
2/3 cups almond flour
2 ½ tbsp oat flour
A pinch of salt
1 tsp vanilla extract
1 egg
1 ½ tbsp almond butter
½ tsp baking powder

Directions: Preheat your oven to 350F and line a cookie sheet with parchment paper. Add the dates, milk and butter to a saucepan and heat over low heat. Mash the dates into the butter and milk until soft and warm. Add all of the ingredients to a mixing bowl and mix until well combined (there will be little chunks of dates and that’s okay!). Scoop 2 tbsp of batter onto the baking sheet. Wet your fingers and press down on each cookie until somewhat flat. Bake for 15-16 minutes. Let cool completely before enjoying.

Store in the fridge for up to a week or in the freezer for longer.
