Added Sugar Free Overnight Strawberry Chia Oats

As a busy mama who is juggling being a SAHM, a working mom and my kids teacher for home schooling, I know the importance to having not only a healthy and energizing breakfast but also an easy and meal prep friendly one.

These strawberry chia oats are easy to make. Just whip up the sweet and added sugar free strawberry milk and pour over chia seeds and oats. Cover and let it sit in the fridge. In the morning your breakfast (for you and the family) will be ready to go. No additional prep in the morning required!

These oats are also fiber and antioxidant packed. Both of which help to support your gut microbiome, glowing skin, immunity, energy and more. This is everything I personally want from a breakfast. These oats also contain protein and healthy fats. With the combination of fiber rich carbs, protein and healthy fats you don’t have to worry about being hungry. This combo leaves you feeling energized, satiated and full longer.

This batch makes quite a bit but adjust for who you are feeding and how many days you need to be prepped for. These oats are the perfect amount for myself and my two kids. They last up to three days in the fridge when stored properly so if you want breakfast for a few days just make more.

What you need (makes 2 - 3 servings):

1 1/4 cup rolled oats
3 tbsp chia seeds
1 2/3 cup almond milk or other plant based milk
1 1/4 cup frozen or fresh strawberries
2 pitted dates
1/4 tsp vanilla bean powder or 1 tsp vanilla extract
A pinch of sea salt

Directions:

Add the milk, strawberries, dates, vanilla and sea salt to a high speed blender. Blend until smooth. In a glass container add the oats and the chia seeds. Pour the strawberry milk over the oats and whisk until well combined. Cover and store in the fridge for at least 3 hours or overnight.
