Honey Peanut Butter Overnight Oats

Overnight oats are one of my favorite hacks for healthier and simpler weekday mornings. They are something my kids love and something I love as well.

Overnight oats are a great way to start the day because they are packed with fiber and other vitamins and nutrients to support your energy throughout the morning. I love these overnight oats because they contain oats, chia seeds and hempseeds. All of which support gut health which leads to glowing skin and a healthier body. Plus, they are easy to make, meal prep friendly (they only take minutes to prep) and they help minimize clean up in the morning. I also love these because they are perfect for on the go. If you have somewhere to be early, just pack these in a lunch box and enjoy whenever!

What you need (serves 2):

1 cup rolled oats
1-2 tbsp single ingredient peanut butter or an almost empty nut butter jar
1 1/2 tbsp honey
1 1/2 tbsp chia seeds
3 tbsp hempseed
A pinch of sea salt
1 1/3 cup almond milk or other plant based milk

If you want to add more protein feel free to add a scoop of vanilla protein powder

Directions: Add all ingredients to a jar (or if using an almost empty nut butter jar just add the ingredients right in there). Whisk. Then cover and set in the fridge for at least 3 hours or overnight. Store in the fridge for up to 3 days. Enjoy with your favorite toppings like coconut, banana, berries, yogurt or other toppings.
