Banana Bread Overnight Oats
If there is one rule I follow as a mom of three, it is that breakfast must be meal prep-able (unless it’s the weekend when we do something fun!). Weekdays, especially mornings, are already busy enough. There’s getting everyone including yourself ready, fitting in a walk, the cleanup, the driving to activities, etc. It can be a lot. To minimize the stress and decision fatigue I choose to meal prep breakfasts ahead of time.
One of my go to breakfasts is overnight oats. They take minutes to prep and are fun for everyone to enjoy!
These banana overnight oats are not only delicious but packed with superfoods. They also happen to be added sugar free!
No dates? Just add a drizzle of honey or maple syrup. It won’t be added sugar free but it will work just fine!
If you’d prefer, you can blend the milk with the banana before adding to your jar. I love it this way because it makes it creamy, extra sweet and avoids any big bits of bananas if that’s not your thing.
What you need (makes 2 ½ servings):
1 1/4 cup rolled oats
1 banana mashed
2 tbsp chia seeds
2 tbsp hempseed
A few dashes of Ceylon cinnamon
A pinch of salt
3 pitted medjool dates
1 ½ cup plant based milk
Optional 1 scoop vanilla protein powder
Directions: Add all ingredients to a jar and whisk until smooth. Store in the fridge for at least 3 hours or overnight. Enjoy with yogurt, banana slices and walnuts (or chocolate chips!). Enjoy!
Store in the fridge for up to 4 days.
